A simple healthy salad with a middle eastern influence to help you feel great.
Ingredients 150g of dried Puy lentils handful of fresh mint handful of fresh flat leaf parsley 1 courgette 1 small onion 1 lemon salt and pepper olive oil
Method
1. Cook the lentils in water and boil for 15-20 mins, drain and allow to cool. Finally chop the parsley and mint then combine with the lentils in a bowl.
2. Finely chop the courgette and sauté in olive oil for 5 mins. Add to the lentil mix.
3. Finally chop the onion, add to the lentil mix with the zest and juice of one lemon. Season with salt and pepper and mix with a liberal amount of olive oil, then serve!
